BROCCOLI CASSEROLE


2 packages frozen chopped or spear broccoli ( I use florets ) 1 cup mayonaise 1 cup grated cheddar cheese 2 eggs slightly beaten 1 can cream of mushroom soup 1 small minced onion ritz crackers
Cook broccoli 5 minutes in boiling salted water. Drain. Mix all ingredients except broccoli and crackers Add broccoli and mix well. Pour into greased 2 qt. casserole dish. Sprinkle cracker crumbs on top. Bake at 350 degrees for 20 to 30 minutes.
